5 easy to make dessert recipes

I have had so many people ask me about my recipes!! What kind of sugar I use, what types of flours and how they taste so amazing without all the added sugar and carbs!!

Well I am going to share a few of my favorite recipes with you so you can try them out for yourself!!

Recipe 1: Healthy Frozen Peanut Butter cups

This was one of the first recipes I ever came up with. As a nutrition coach, this was one of my favorites to hare with my clients. Try it out for yourself.

Ingredients:

  • 1 8 oz. fat free Cool Whip thawed

  • 8 tablespoons PB2 Powdered Peanut Butter

  • 6 tablespoons water

  • sugar free chocolate syrup

Instructions:

  1. In a medium bowl mix the PB2 and water until smooth.

  2. Fold in the Cool Whip.

  3. Line a mini muffin pan with mini muffin liners. Spoon in the mixture


Recipe 2: Protein Chocolate Shake.

If you have a sweet tooth after dinner like me, this is the perfect “frosty” that will take the place of your ice cream addiction.

Ingredients:

  • 1/2 carton of Premier Protein chocolate shake mix

  • 5 strawberries

  • 3/4 c ice

  • 2 tbsp of sugar free cool whip

Directions:

Mix all ingredients together in a blender and enjoy.


Recipe 3: Mint Brownie Energy Bites:

Delicious no bake mint brownie energy bites packed with omega 3s thanks to heart-healthy walnuts! These mint chocolate energy bites are made with only 5 ingredients and taste exactly like a brownie. Truly the best healthy snack or treat to keep in your fridge or freezer!

Ingredients;

  • 1 cup Medjool dates, packed pitted

  • 3 tbsp Cocoa powder, unsweetened

  • 1/4 tsp Mint or peppermint extract

  • 1/8 tsp Salt

  • 1 tsp Vanilla extract

  • 1 cup Walnut, raw halves

Directions:

Mix all together in blender, roll into bite size balls, Store in fridge or freezer.


Recipe 4: Keto Cookie Dough Fat Bombs

Who doesn't love chocolate chip cookie dough? Back in the day that I used to make traditional cookies, I would eat so much cookie dough that I almost didn't want any of the baked cookies when they were done. These Keto Cookie Dough Fat Bombs are a healthier way to get that cookie dough fix.

Ingredients:

  • 1 8oz package cream cheese room temperature

  • 3 tablespoons butter room temperature

  • 6 tablespoons peanut butter or other nut butter

  • 2/3 cup Swerve Confectioner Sweetner

  • 1/4 cup psyllium husk (whole or powdered)

  • 1 teaspoon vanilla extract

  • 1/2 cup sugar free dark chocolate chips

Directions:

  • Cream together the cream cheese and butter in your stand mixer with the paddle attachment at a low speed until smooth.

  • Add all the remaining ingredients except the chocolate chips. Mix on a low speed until a smooth dough is formed.

  • Add the chocolate chips and mix until just combined.

  • Use a cookie scoop, or large spoon, to form balls. Place on a cookie sheet lined with a silicone baking mat or parchment paper.

  • Place the cookie sheet in the freezer for 20 minutes.

  • Place the fat bombs in an airtight container and store in the freezer.

  • Allow the fat bombs to thaw for 5-10 minutes before enjoying.


Recipe 5: Lemon Coconut Cream Cheese balls

It’s easy to make quick no bake keto snacks to satisfy a sweet tooth. These easy to make low carb lemon coconut cream cheese balls combine two great flavors into tasty cheesecake like bites!

Ingredients:

  • 1/2 c blanched almond flour

  • 4 oz cream cheese softened

  • 2 tbsp swerve sweeter

  • 2-3 tbsp fresh lemon juice

  • 3 tbsp unsweetened shredded coconut


Directions:

Combine first 4 ingredients together in a food processor. Blend until it forms a smooth dough, then Roll into 12 balls by hand. Roll the balls in the coconut, then place balls on cookie sheet. Chill until firm. Then store in air tight container.
