I have a feeling you’re going to be making many, many batches of this EASY, 4 ingredient sugar-free strawberry chia seed jam recipe. It’s perfect for summer strawberries, and it’s the best sugar-free jam recipe out there!
I always thought toast + jam could never be low carb, but low carb toast and jam IS POSSIBLE and it’s utterly delicious. This chia jam recipe is beyond easy. The whole process, most of which is hands off, takes 30 minutes. And just 4 basic ingredients… 2 ingredients if you don’t include the optional ones. Just my kind of recipe.
Making jam with chia seeds starts with heating the strawberries. This causes them to release their liquid and break down a bit. Then, we’ll mash the strawberries. This probably won’t take much work because they should be pretty soft at this point.
Now it’s time to sample. Taste the mixture to see if it’s sweet enough already or if it will need a bit of sweetener. This will vary from person to person, so decide what YOU like best. If it’s too tart, you can stir in some sweetener. I like to start with a tablespoon at a time and then sample again. Some strawberries will be sweeter than others so it’s really a good idea to taste before you add in TOO much sweetener.
Now it’s time to stir in those chia seeds and the lemon zest if you’re going to add it. Then it will just take 5-10 minutes to thicken. (Just enough time to get that keto bread ready.)
HOW CAN I THICKEN JAM WITHOUT SUGAR?
You can thicken jam without sugar by using chia seeds! Chia seeds are actually a great thickener for keto strawberry jam because it’s easy and healthy.
Chia seeds have protein, fiber, and healthy omega-3 fatty acids. No sugar needed in this chia berry jam.

CAN YOU FREEZE STRAWBERRY CHIA JAM?
Yes, you can freeze strawberry chia jam! It will last up to 3 months in the freezer. Simply thaw it out, give it a stir, and it’s ready to use again.
Ingredients:
~1 lb Strawberries (sliced: fresh or frozen)
~2 tbsp Chia seeds
OPTIONAL INGREDIENTS: ~2 tbsp Besti Powdered Allulose (or any powdered or liquid sweetener of choice, to taste)
~1/2 tsp Lemon zest
Instructions:
Place the strawberries into a small saucepan over medium heat. Cook, stirring occasionally, for about 10 minutes, until the strawberries release a lot of liquid and soften.
Mash the strawberries with a spoon or potato masher. If you want super smooth jam without strawberry pieces, use an immersion blender to puree the berries.
Taste to check if the jam is sweet enough. Add sweetener to taste, if desired, 1 tablespoon at a time.
Remove from heat. Stir in the chia seeds and lemon zest, if using. Allow the jam to cool for 5-10 minutes to thicken.
For even thicker jam, add an additional 1-3 teaspoons chia seeds if desired. Jam will thicken more when refrigerated.
